Top End Watermelon Martini with a Balhannah Twist


My Aunt is visiting my cousin up North and their friend created a Top End Watermelon Martini for my birthday month! They said to blend (in a Nutribullet for example) sugar syrup, watermelon, vodka and fresh lime juice.

But I had made a sweet and sour syrup the other day (heat 1 cup of water, with 1 cup of sugar over medium heat until sugar dissolves, let simmer for 5 minutes, then take off heat and add 1 cup fresh squeezed lime juice and 1 cup fresh squeezed lemon juice. Allow to cool and keep in fridge a couple of weeks).

And I took delivery of some lavender bitters.

So. I present the Top End Watermelon Martini with a Balhannah twist. You will need:

1/4 of a watermelon

1/2 C sweet sour syrup

40 ml vodka

4 dashes lavender bitters (of course this is not a normal ingredient and you can make this without the bitters)

Put ice, watermelon and syrup into blender and blend. This will make a lot, so you can keep the rest in the fridge for a nice (alcohol-free) juice later.

Decant enough of the watermelon blend to fill your glass into a mixer glass and add some test that the flavours are to your liking (I added an extra splash of sweet and sour syrup). Add the vodka and bitters and stir. Pour into chilled glass. This is really, really delicious- the lavender bitters take the edge off the sweetness and the sweet and sour syrup adds a nice sharpness. This tastes extra good since it is sooooooooo hot here….
