THE DALBY FAVOURITE(S)
TYPE I
- 30 ml sweet vermouth
- 30 ml Campari
- + 45 ml bourbon = Boulevardier
- + 30 ml gin = Negroni
- + 30 ml vodka = Milano
- Pour over ice and stir
TYPE II
- 22.5 ml sherry
- 10 ml Kahlua
- 22.5 ml espresso
- + 45 ml vodka/rum = Espresso Martini
- Shake with ice, strain and serve
The Sour (60 ml spirit, 30 ml lemon, 15 ml simple syrup); Traditional = egg white, Non Traditional w/o egg white)
The Fizz (Traditional sour lengthened w/ soda water)
The Collins (Non traditional sour lengthened w/ soda water)

Champagne (lots of interesting champagne cocktails, most don’t follow a template. Things like French 75 fall into the sour family, so this is more for things like the champagne cocktail)
The Sidecar (15 ml lemon Juice, 30 ml liqueur (usually Cointreau), 45 ml spirit)
The Old Fashioned (1-4 dash bitters, bar-spoon simple syrup, 60 ml spirit, built and stirred)
The Martini (Dash orange bitters, 30 ml dry vermouth, 60 ml gin, stirred and strained)
The Manhattan (A few dashes of bitters, 30 ml sweet vermouth, 60 ml rye)
The Julep (Muddled mint + sugar cube, 66.5 ml bourbon, built under crushed ice)
The Caipirinha (3 spoon crushed sugar or sugar cube, 6 lime chunks, 60 ml Cachaca, crushed ice)
The Ginger Highball (22.5 ml homemade ginger syrup, 22.5 ml citrus, 60 ml spirit, top w/ soda)
